Preparation

  1. PREPARE PAN: Line a full sheet pan with parchment paper; spray lightly with pan release.
  2. PREPARE FUDGE: Stir apricots into hot amaretto; let stand 30 minutes to plump.
  3. Pour evaporated milk into large stockpot or kettle; stir in sugar until well mixed. Add butter and mascarpone. Heat mixture over medium-high heat, stirring constantly, until a gentle boil begins. Scrape down sides of pot with rubber spatula to avoid crystallization on sides. Reduce heat; simmer gently, stirring frequently, until mixture reaches soft ball stage or temperature is 230°F to 240°F (20 to 30 minutes). Remove from heat.
  4. Stir in all chocolate except white chocolate, one-third at a time and mixing well after each addition, until chocolate is melted. Stir in marshmallow crème; mix well to blend. Add apricot amaretto mixture, extracts and salt; mix well.
  5. Pour hot fudge into prepared pan. Quickly spread fudge evenly with spatula. Sprinkle top of fudge with diced white chocolate. Cool until set; cut into 1-inch squares.
